History of the Blue Crab

Despite the Blue Crab being one of the most prized crustaceans and can be found as far north as Canada or down the South American coast including Uruguay as well as the Mediterranean, the female only only mates once. Nevertheless, once fertilised, she can release as many as two million eggs.

The male, in contrast, mates many times with different females. Although the Blue Crab, its Latin name 'Callinectes sapidus'  or “savory beautiful swimmer”, appears in diverse national cuisine, it is most celebrated in Maryland. Most specifically in the Chesapeake Bay from April to December.

Blue crabs are in high demand as a delicacy for their subtle, sweet flavor and tender meat. Approximately 50% of all US crabs originate from Maryland.

Nevertheless the same demand leads to them being one of the most heavily harvested seafood commanding high prices worldwide.

The Blue Crabs unique flavour is developed through a build up of fat stores or 'mustard', when preparing to hibernate during the colder seasons.
